Mexican Open Faced Sandwich Recipe

Our Open Faced Sandwiches


A long, long, LONG time ago, we found a recipe for open faced sandwiches. I liked the recipe, but my mother and children did not like it at all! So, I tweaked it and tweaked it until finally everyone approved. 

We all love this sandwich so much now that we have to triple it every time we eat it for dinner! Of course, there are five of us in the house, and we always want more than one-half of a loaf, even if it is for leftovers the next day! And let me tell you, this sandwich is so good that there is always someone begging to have it made at least once a week!



Mexican Open Faced Sandwich Recipe

Everyone in the house doesn't always eat them the same way, though. My boys and brother, for example, they usually add jalapenos, pepper flakes, and hot sauce to theirs. As for me, I like adding shredded lettuce and avocado to mine. It helps me pretend that it is a little healthier ;) I also omit the tomatoes because I have diverticulitis and am not allowed to eat seeds. My fiance, he likes to add the same things that my children and brother do, but he also adds cilantro to his.

The recipe is below and can be printed to place on an index card for your recipe collection. I hope you enjoy this recipe as much as we do! As a side note, when we make this, we also serve it with a hearty salad.
